An exclusive wine dinner in The Saddle Room at The Shelbourne showcasing the exceptional modern Spanish wines of Bodegas Ramón Bilbao
The Shelbourne Hotel is delighted to welcome Kirsty Loftus, brand ambassador for the prestigious Bodegas Ramón Bilbao, to host an exclusive wine dinner in The Saddle Room showcasing the wines of this award-winning Spanish winery on 31st May.
Featuring a five-course menu created by Executive Head Chef Garry Hughes, dinner will be accompanied by selected wines from Bodegas Ramón Bilbao’s magnificent range, from Rioja to Rueda and Ribera del Duero, Kirsty will introduce every glass, chosen to complement each course perfectly.
A unique and indulgent experience, offering the opportunity to taste, side by side, the finest wines of Bodegas Ramón Bilbao and The Saddle Room’s superb menu, the evening begins with a welcome reception at 6.30 p.m. on Wednesday 31st May followed by dinner in The Saddle Room at 7p.m.
The Ramón Bilbao tasting menu begins with a chilled tomato consommé, followed by house-cured Castletownbere salmon with pickled Lusk cucumber, smoked natural yoghurt and Liscannor crab. The next course is a torchon of foie gras with red onion marmalade and baby brioche, then a main of braised short rib of Sheelin beef with celeriac and onion soubise. Following this is Bellingham Blue cheese, soaked in Ramon Bilbao Reserva Rioja, with a celery salad, and finally dessert is a chocolate dome with salted caramel and chocolate mousse and a raspberry insert.
Bodegas Ramón Bilbao was founded in Haro in the traditional heart of DOC Rioja in 1924. With winemaker Rodolfo Bastida at the helm since 1999, the Bodega combines its historic 90-year track record with innovative experimentation by its oenologists to create a range of pioneering and award-winning wines.
The wines being served at The Saddle Room dinner all epitomise the signature modern, vibrant style of Bodegas Ramón Bilbao – fresh, elegant wines, which stay true to the identity and character of the winemaking regions where they have their roots.
White wines served on the night will include the Ramón Bilbao Rueda Verdejo, a fresh, zingy and crisply aromatic 100% Verdejo, and the Mar de Frades Albariño in its distinctive blue bottle, a textbook Albariño with generous, juicy white peach and a honeyed nose.
Red wines served at the Ramón Bilbao dinner will include the Cruz de Alba Crianza, Ribera del Duero, with its black fruits and bold cassis flavours, and the Ramón Bilbao Reserva Rioja Red, full of mature toasted fruit, dark plum and dark cherry, and tobacco, deep and dense. The premium wine of the night is the Ramón Bilbao Mirto, an opulent and powerful 100% Tempranillo grown on 70-year old vines, complex and intense – this is a magnificent red wine with great personality and a modern style.
The five-course Ramón Bilbao tasting menu in The Saddle Room at The Shelbourne costs €79 per person including the welcome reception and matching wines with each course – an evening of fine Spanish wines and exceptional food to savour.
